Fermentation on the the grape skins for eight days and perfecting in the barrels for eight months make this wine versatile, give it balanced acidity and an intense persistence.

Vinification
Thinning of the grapes at the end of July. Manueal harvest, where only the best bunches are selected and collected into small wooden crates. Then grapes are gently pressed. Afterwards follows fermentation, on skins, for about 7-8 days
